Step 1
Place Walnuts into food processor and pulse until crumbly, set aside.
Step 2
Using a heat proof bowl soak dates in boiling water for 15 minutes. Drain off water, pit dates and place in food processor. Blend until soft.
Step 3
Place grated carrot, minced ginger and dates together in a mixing bowl, mix until well combined.
Step 4
Add the Prana Protein, take your time mixing to ensure all is incorporated.
Step 5
Finally fold the Walnuts into the mixture and add the cinnamon.
Step 6
Form into 30 gram balls with your hands, roll evenly in extra coconut and place in the freezer on a tray or plate to set for 4 hours.
Step 7
Store in the freezer in an air tight container.
You can supplement grated ginger for powdered ginger (use 1/4 teaspoon) and you can use any vanilla flavoured protein powder, but I do recommend Prana Protein as it tastes amazing!
